The fruit is accompanied by dusky wood spices and fine, cedar-like tannins. It is graceful, refined yet has a bit of new school sass thrown in. If you like it fresh and youthful then drink in the next 2-4 years. For more mature characters, buy it and lay down – the Bird Rock has a reputation for rewarding time spent in the cellar.
